Ingredients:

  • Wahoo, grilled medium rare 2 Lbs
  • Garlic, thin sliced 6 cloves
  • Onions, fine diced 8 pz
  • Cumin 4 Tbsp
  • Tomatoes, fine chopped 1 lb
  • Cilantro, course chopped 4 oz
  • Corn Tortilla, raw 48
  • Pepper Jack Cheese, grated 1 lb

Preparation:

Shred the wahoo meat into small pieces. Hold aside. Saute the garlic, onions, and cumin in very little oil until blanched. Add in the tomatoes, and cilantro and toss to incorporate. Remove from heat, and add the above items to the shredded wahoo mix together carefully. Please note the wahoo should remain medium rare when the mixture has been prepared. Warm the corn tortilla on the flat top, sprayed with a little non-stick spray. Lay 1 oz of the mix across the leading edge, and top with 1/2 oz of the cheese. Roll tightly to form a packed tube. Affix with toothpicks. Hold refrigerated for service.
