Preparations:

  • Saute beef trimming and mirepoix
  • Add tomato paste, caramelize and add red wine
  • Reduce to 1/3rd add demi and chopped tomatoes +Sugar
  • Bring to a boil, skim off any scum.
  • Turn to a simmer for 45 min continuously skimming
  • Check consistency and pass through the Chinois ( special strainer)
