Preparations:
- Saute beef trimming and mirepoix
- Add tomato paste, caramelize and add red wine
- Reduce to 1/3rd add demi and chopped tomatoes +Sugar
- Bring to a boil, skim off any scum.
- Turn to a simmer for 45 min continuously skimming
- Check consistency and pass through the Chinois ( special strainer)
