Ingredients:

  • Red Bean 5 Bags
  • Lighly flavored beef stock 5 gall
  • Diced Carrotes 3 Lbs
  • Diced Onions 2 Lbs
  • Diced Celery 3 Lbs
  • Diced Chourico 8 Lbs
  • Toamato Paste # 10 1/2 Tin
  • Oregano, Thyme, Majoram 1/2 Cup each
  • Chopped Garlic 3 Tbsp
  • Salt /Black Pepper To taste
  • Tinned tomato # 10 1
  • Beurre manie 2 Lbs

Preparation : yield 5 Gallons

  • Cook the Red beans in the beef stock until cooked
  • in another pot sweat the onions, carrottes, celery, chourico
  • Season lightly, add the herbs tomato and the chopped tomato, cook for 10 minutes, stir all the while
  • Gradually add the beans and stock mixture,
  • Continue stirring and bring to a simmer, then remove from the heat.
  • In another pot, gradually add 4 ladles of the soup stock with the beurre manie.
  • Mix well to ensure smooth paste, then you can wisk the roux little by little into the soup
  • Bring the soup back to a simmer for 20 minutes and adjust the seasoning.
