Ingredients:
- 6 oz /175 gr. Onions -fine chopped
- 2 fl oz / 60 gr Olive Oil
- 6 1/2 Lb /3.25 Kg Ground Lamb
- 8 oz /250 gr fresh Bread crumbs
- 8 Oz /250 Gr Pine nuts
- 10 Fl Oz / 300 ml Milk
- 1l2 cup/30 Gr Parsley -chopped
- 2 tsp/ 10 ml Rosemary
- 2 tsp /12 ml Salt
- 1 tsp /5ml White pepper
- 25 stripes Bacon
Procedure:
- 1) Saute the Onions in Oil until tender. Do not brown. cool down
- 2) Combine all ingredients except the bacon in a bowl. Mix gently until evenly combined. Do not overmix.
- 3) Scale the meat into 5-oz ( 150 gr) portions. Form the portion into thick patties.
- 4) Wrap a strip of bacon around each patty and fasten with toothpicks.
- Grill or broil the patties under moderate heat until done turning once.
- Remove the picks before serving.
