Ingredients:

  • 6 oz /175 gr. Onions -fine chopped
  • 2 fl oz / 60 gr Olive Oil
  • 6 1/2 Lb /3.25 Kg Ground Lamb
  • 8 oz /250 gr fresh Bread crumbs
  • 8 Oz /250 Gr Pine nuts
  • 10 Fl Oz / 300 ml Milk
  • 1l2 cup/30 Gr Parsley -chopped
  • 2 tsp/ 10 ml Rosemary
  • 2 tsp /12 ml Salt
  • 1 tsp /5ml White pepper
  • 25 stripes Bacon

Procedure:

  • 1) Saute the Onions in Oil until tender. Do not brown. cool down
  • 2) Combine all ingredients except the bacon in a bowl. Mix gently until evenly combined. Do not overmix.
  • 3) Scale the meat into 5-oz ( 150 gr) portions. Form the portion into thick patties.
  • 4) Wrap a strip of bacon around each patty and fasten with toothpicks.
  • Grill or broil the patties under moderate heat until done turning once.
  • Remove the picks before serving.
