Preparation

  • Boil the Fishhead until it comes off the bone. Take Fish head out cool off
  • Take the meat off the bone and return it into the stock.
  • Simmer approx 30 min then strain, then add tomatoes and tomato paste
  • Add the carrots onions, celery. Once the veggies are half cooked, add the potatoes and green peppers.
  • Once the is 75% cooked thicked it with flour mixed with cold fish stock.
  • Add the broker up fish and seasoning. For the color add browning.
  • Before serving add sherry peppers, and Black rum
