Ingredients for this hot sauce:

  • 4 liter Heavy Cream
  • 1 liter White Wine
  • 4 Clove Garlic
  • 4 Chopped Shallots
  • 4 Lbs Fresh grated Cheese
  • Salt/ White Pepper
  • 1 oz Butter
  • 1 oz Olive

Sweat of the garlic and shallots in the butter and oil, lightly season.

Add the white wine bring to a simmer and cook for 2 minutes

Gradually whisk in all of the parmesan cheese.

Add the heavy cream bring to a low simmer and cook for 8 minutes. ( Stir constantly while cooking)

Adjust the seasoning, strain through a chinois strainer.

Note: For Pizza thicken the sauce with corn starch.
